For a nightcap that defies convention, look no further than the ocean floor.

Located in Augusta, Margaret River, Subsea Estate is Western Australia’s pioneering open-ocean winery. Rather than resting in a traditional cellar, Subsea’s custom 300-litre vats are deployed by specialist divers and anchored to the seabed, 15 to 20 metres below the surface, where ocean swells do the work winemakers’ hands usually would.

The result is a wine shaped by the rhythms of the Southern Ocean. Consistent temperatures, oceanic pressure, and gentle currents create distinctive characteristics that speak to ocean rhythms and the sea’s seasons. It’s an unusual act in the winemaking world, with the ocean playing a starring role.

Pure Ocean, is the winery’s cult favourite signature Shiraz. Immersed for almost ten months during a high ocean-energy year, it experienced relentless movement, mixing and suspension. The wine is raw and powerful, with bold, bright fruit, blackcurrant and plum combine with peppery spice and minerality. Medium-bodied and dry, it carries a subtle hint of salinity that speaks directly to its oceanic terroir.

Each wines from Subsea Estate has a story worthy of the stage, and this one certainly makes a splash.

Pairing: chargrilled octopus, in olive oil, on thin slices of toasted sourdough or just dip in straight from the tin
